Whole Spices Ingredients:

  • 2 tbsp Jeera
  • 3 tbsp Coriander seeds
  • 1 tbsp Black peppercorns
  • 5 nos Cloves
  • 3 nos Bay leaves
  • 2-inch Cinnamon stick
  • 1 no Chakri Phool (star anise)
  • 3 nos Black cardamom.
  • 5-6 nos Green cardamom.
  • 1 no Mace
  • 4-5 nos Whole dry red chillies
  • 1 tbsp Kasuri methi
  • ¼th tsp Methi seeds

Powdered spices:

  • 3 tbsp Anardana(pomegranate) powder
  • 1 tbsp Amchur(dry mango) powder
  • 1 tbsp Red chilli powder
  • 2 tsp Black salt

Prepare Pindi Chole Chana Masala

To make the chole masala powder, take a broad non-stick pan and add the cumin seeds, coriander seeds, black peppercorns, cloves, cinnamon stick, Chakri Phool(star anise), black cardamom, green cardamom, mace, bay leaves and whole dry red chilies. Dry roast them on a medium flame for 2 to 3 minutes or till they turn aromatic.

In the same pan, add methi seeds, anardana(pomegranate) powder and karuri methi dry roast them on a medium flame for a minute or till they change their color. Transfer to a plate and keep aside to cool.

Transfer to a mixer jar all the dry roasted ingredients and add the red chilli powder, black salt and amchur(dry mango) powder. Mix together all the ingredients and blend in a mixer till smooth.

Store in an air-tight container in a cool and dry place and your Pindi Chole masala powder is ready to use.
