Ingredients

For Paneer Tikka Masala Recipe:

  • 250 gm paneer (Indian cottage cheese)
  • 1/2 cup thick yogurt (hung curd)
  • 1 medium bell peppers (Capsicums)
  • 1 medium onion
  • 1 medium tomato
  • 1 tbsp ginger-garlic paste
  • 1 tbsp lemon juice
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp mustard oil
  • Salt to taste

For Masala Gravy:

  • 2 tbsp vegetable oil
  • 1 large onion
  • 1 tbsp ginger-garlic paste
  • 2 large tomatoes
  • 1/4 cup cashew nuts
  • 1/4 cup heavy cream or fresh cream
  • 1 tsp red chili powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1 tsp kasuri methi (dried fenugreek leaves)
  • Salt to taste
  • Fresh coriander leaves for garnish

Process

For Make Paneer Tikka:

In a mixing bowl, combine yogurt, ginger-garlic paste, lemon juice, red chili powder, turmeric powder, garam masala, cumin powder, coriander powder, mustard oil, and salt to make the marinade.

Add cubed paneer to the prepared marinade. Onion layers separated and cut in squares. Cut in squares or cubes bell pepper and tomatos. Make sure the size of onion and bell pepper are almost the same as paneer. Crunchy onions and bell peppers impart a great texture and aroma to the final dish.

Gently mix again so that the marination coats the paneer, onions, tomatos and bell peppers evenly. Cover the bowl and let the paneer marinate for at least 1-2 hours in the refrigerator.

Grilling Paneer in Oven:

after marinating, thread the paneer cubes and vegetables on bamboo or metal skewers. If you are using wooden skewers, soak them in water for 10-20 minutes before threading to prevent burning during grilling.

Preheat your grill or oven to 180°C. Place the skewers on the grill or in the oven on a lined baking tray.

Grill the paneer cubes for about 10-15 minutes (depending on the oven temperatures) or until they are lightly charred and cooked through, turning them occasionally for even cooking. If using an oven, you can use the “grill” mode.

Once cooked, remove the paneer tikka from the skewers and set them aside.

Grilling Paneer in Fry Pan:

Heat about 1 to 2 tablespoons oil in a flat pan or frying pan or a skillet until shimmering. Place the skewers on the pan and begin to pan fry them on medium heat.

When one side is crisp and browned, gently rotate the skewers. Keep on rotating until all sides are browned. If necessary, add more oil/butter to the pan while frying.

Grilling Paneer in charcoal grill:

Absolutely! Cooking Paneer Tikka on a charcoal grill adds a wonderful smoky flavor and enhances the overall experience of the dish.

Prepare your charcoal grill. Light up the charcoal and let it burn until it turns into hot, glowing embers. Once the charcoal is ready, place a grill rack over it at a suitable height from the hot coals. This will ensure the paneer cooks evenly without getting too close to the direct heat.

Place the paneer skewers on the grill rack over the hot coals. Let them cook for about 10-15 minutes, turning them occasionally to ensure even grilling. The paneer tikka is ready when it’s lightly charred and cooked through.

However you cook your paneer, you’ll want to remove the skewers and set the grilled paneer and vegetables to the side while you make your gravy.

How to Make Paneer Tikka Masala Gravy:

Heat oil in a pan on medium heat. Add chopped onion, chopped tomatoes and cashew nuts and add more salt and mix well. Let the tomatoes cook till they become soft, it will take about 3-4 minutes. Keep stirring occasionally with a spoon. Add red chili powder, turmeric powder and garam masala powder. Mix well and let it cook for a minute. Switch off the gas and take out the mixture in a plate. Let it cool for 4-5 minutes.

When the mixture cools down, put it in the jar of the mixer grinder. If requied add water and grind to make a puree.

Heat oil in a pan. Pour puree in the same pan. Mix with a spoon and bring to a boil on medium heat. Be careful it will begin to splash out of the pan, you can partially cover and cook. When the mixture starts boiling, add kasoori methi (crushed by hand) . Stir with a spoon and let it cook for a minute.

Pour the Paneer Tikka made earlier. Let the gravy cook on low heat till it thickens, it will take about 3-4 minutes. Add fresh cream and mix well.

Switch off the gas and take out the vegetable in a serving bowl. Garnish it with green coriander and serve it with hot parathas.
