However, if you don’t have fresh fenugreek leaves, add some dry fenugreek leaves (Kasuri methi). Steps For how to make Methi Malai Paneer :
For Soak Methi leaves Ingredients
- 2 Cups Fresh Fenugreek Leaves
- 2 Cups Water
- Salt to taste
For Onion Cashew Paste Ingredients
- 18 Cashew nut
- 3 Medium size roughly chopped onion
- ½ inch ginger
- 2 Cups Water
For White Gravy Ingredients
- 1tbsp Butter
- 1 ½ tbsp Oil
- ½ inch Cinnamon Stick
- 2 nos Green Cardamom
- 2 nos Clove
- 8-10 Black Peppercorns
- 1 no Bay leaf
- Prepared Paste (Onion Cashew Paste)
- 2 nos Chopped Green Chilies
- 1 Cup Curd
- Salt to taste
- Water as required
For Methi Paneer Ingredients
- 1tbsp Oil
- ½ tsp Cumin Seeds
- A pinch of hing
- Methi Leaves soaked with chopped
- ½ tsp Sugar
- ¼ tsp Turmeric Powder
- ½ tsp Red Chili Powder
- 250gm. Paneer
- Prepared Gravy
- 1tbsp Fresh Cream
Soak Methi leaves
Before you proceed with the recipe, pluck methi leaves. rinse them well in water. In a bowl add fenugreek leaves, water, and salt to taste. mix well and allow the mixture to sit at room temperature for 15 to 20 minutes. This way much bitterness can be removed from methi leaves.
Onion Cashew Paste
In a pan on medium heat, add water, roughly chopped onion, ginger, cashews nut and blanch them well. Once it’s done strain the water into a bowl. Grind to a smooth paste using your blender or food processor.
White Gravy
In a pan add butter, oil and it’s hot add cinnamon stick, green cardamom, clove, black peppercorns, bay leaf let it splutter. Add green chili and add the prepared paste and saute it well on medium flame. Add Curd and mix everything well. Cook for 5-10 minutes. Strain the gravy into a bowl. Remove the whole spices. Keep it aside.
Now squeeze off the methi completely. finely chopped methi leaves. In a Kadhi add oil it’s hot add jeera, hing, chopped methi leaves and saute it well. Add sugar, turmeric powder, and red chili powder and saute it for 2 minutes. Add paneer cubes and saute on low heat for 2minutes.
Making Methi Paneer
Now add prepared gravy and mix everything well on medium flame. Then add fresh cream and cook for 5 minutes on medium flame. Methi malai paneer is ready and served hot.
