Making it is very easy, Rich in texture and taste, Bottle Gourd Kheer doesn’t need any special preparations. All you need to make lauki kheer is a fresh bottle gourd, sabudana (Tapioca pearls), milk, sugar, dry fruits and ghee.
Lauki is also known as bottle gourd is used in Indian cuisine in various ways. lauki is also called as dudhi (Marathi and Gujarati), Ghiya/Ghia (hindi). It is also called “kaddu” and sorakaya in regional languages, although the name Kaddhu is also used for other such vegetables.
Lauki is a cooling veggie to have during the summers. You can make various dishes with lauki from curry to sweet. Lauki Kheer is a sweet dish. It is a traditional Indian sweet dish that is generally made at festivals or for religious ceremonies.
The recipe is very simple and even a beginner in cooking can make this kheer. Just make sure to use fresh milk. Full cream milk is best for any dessert.

For Lauki Kheer Ingredients:
- 1-liter Milk
- 1 Cup Bottle Gourd (Lauki)
- ½ cup soaked Sago (Tapioca pearls)
- ½ cup Sugar
- 1 tbsp Ghee
- 10-12 Almonds
- 10-12 Pistachios
Note: Full cream milk is best for any dessert. Soak the sago in water for 2 hours.
Making Lauki Kheer
Before you start, peel and grate the lauki. Remember to grate the lauki from the thicker side of the grater, if you grate from the thin side. Lift the grated bottle gourd with a muslin cloth to squeeze out the excess water.
Heat ghee in a pan, Add the grated Lauki and saute for 5 minutes on medium heat until the lauki turns soft and tender. Remove them from the pan on a plate.
Use the same pan to boil milk. On medium heat bring the milk to a boil. Once the milk comes to a boil, add cooked lauki(bottle gourd). Stir constantly and cook for 5 minutes.
Then add the soaked sago and stir. Keep stirring every 3-4 minutes. Cook it till 40% milk is reduced. Add sugar mixed well with each other and acquire a thick consistency. Cook until the flavors come out from the lauki kheer and the kheer is thickened.
Note: Lauki kheer can also be prepared in condensed milk. If using condensed milk then avoid adding sugar or add in very little quantity.
The Lauki Kheer is ready. Take out the kheer into a serving bowl, and garnish it with the almond and pistachios stripes. Mouth drooling lauki kheer is ready. Serve it warm or chilled after your lunch/dinner as a sweet dish. Add any dry fruits as per your preference or taste.
