Kat vada is an authentic Maharashtrian recipe. Kat vada is a very popular Kolhapur Authentic spicy and tasty snack recipe made with deep-fried potatoes are served with spicy gravy. Kat is known as “spicy gravy” and vada is an “Indian snack”. Maharashtrian Kat Vada is a very popular street food recipe. it is a popular western India. Kat Vada recipe is an ideal evening snack with a cup of tea but you can also be served for morning breakfast, lunch and dinner.

This recipe is a multipurpose snack. you use it for this snack and serve it with spicy gravy, and you can also use it for vada pav, misal pav, and other snack forms. Also reuse the gravy base is used for many vegetarian and non-vegetarian dishes and hence it is made more spicy, hot, or delicious.
In this recipe, vada is dipped in pungent kat and served with onion, a slice of lemon.

Steps For how to make Kat Vada recipe:

For Kat Masala Ingredients:

  • 2 tbsp Oil
  • 1 tsp Cumin Seeds
  • 1 tbsp Coriander Seeds
  • 1 Black Cardamom
  • 1 Star Anise
  • 1 inch Cinnamon Stick
  • 2 Green Cardamom
  • 8-10 Black Peppercorn
  • 1 tsp Poppy Seeds
  • 2 medium Chopped Onion
  • 1 inch Ginger
  • 6-7 Garlic cloves
  • ¼ Cup Grated Coconut
  • Salt to taste

For the Kat Ingredients:

  • 4 tbsp Oil
  • ¼ tsp Hing (Asafoetida)
  • 1 tsp Turmeric Powder
  • 2 tsp Red Chilli Powder
  • Salt to taste
  • 4 Cups Hot water

For Vada Ingredients:

  • 2 tbsp Oil
  • 1 tsp Mustard Seeds
  • ¼ tsp Hing (Asafoetida)
  • 1 tbsp Ginger-Garlic Paste
  • 2 nos Green Chilies
  • 4-5 Chopped Curry Leaves
  • 1 tsp Turmeric Powder
  • 3-4 Big size Boiled and Mashed Potatoes
  • Salt to taste
  • 1 tbsp Fresh Coriander Leaves

For Vada Batter Ingredients:

  • 2 cups Besan(Gram Flour)
  • 1 tsp Rice Flour
  • ½ tsp Turmeric Powder
  • Salt to taste
  • ¼ tsp Baking Soda
  • Water as required

Make Kat Masala

Heat oil in a pan add cumin seeds, coriander seeds, black cardamom, star anise, cinnamon stick, green cardamom, black peppercorn, poppy seeds, chopped onion, ginger, garlic cloves, and grated coconut, fry them till the onion and coconut turn reddish.

Let the mixture cool down, transfer it to a mixer jar, add water and grind it into a paste.

Make Kat (spicy gravy)

Heat oil in a pan add hing, add the blended paste. Mix well and fry well. Add turmeric powder, red chili powder and mix well. Saute the masala till it starts leaving the oil. Add hot water give it a boil and add salt to taste and mix it well. Add fresh coriander leaves and switch off the flame. Kat is already.

Make Vada Mixture

Heat oil in a pan add mustard seeds, hing, ginger garlic paste, green chilies, and chopped curry leaves to saute it on low flame until the raw flavor goes away. Add turmeric powder, boiled potatoes, and salt to taste and mix it well. Our Batata vada filling is ready.

Take a small portion of the filling, make a ball, and inflated them. Repeat this with vada filling.

Make Vada Batter

In a bowl of besan, add turmeric powder, salt to taste, baking soda, water as required, and mix it well.

Vada Coated with Batter and Fry

Heat up oil for frying, Drop the rolled vada into the batter and coat them. When oil is hot enough, drop the coated vada into it. Fry the vada well until they get nice golden brown color from both sides.
Take vada out, drain excess oil and transfer them into a plate. Vada is already done. Similarly, fry the other Vade.

Serve Kat Vada

Add kat (spicy gravy), take a vada into a serving dish, Serve with a little onion, sev, finely chopped coriander leaves, and bread slices.
