Kasuri Murgh Malai

Kasuri Murgh Malai curry is an amazing recipe with chicken pieces melting in the mouth and a rich, creamy chicken preparation where yogurt marinated chicken pieces are cooked with cashew paste, fresh cream, and basic spices, flavored with roasted & crushed dry fenugreek leaves.

It makes a great addition to your special meals. Kasuri Murgh Malai comes from Mughal Cuisine and is a perfect side dish with Roti or Naan. Steps For how to make Kasuri Murgh Malai:

For Marination:

  • 500 gms Curry cut Pieces Chicken with bones
  • ½ tsp Turmeric Powder
  • ½ tsp Crushed Pepper
  • 2 tsp Ginger Garlic paste
  • 2 nos Green Chillies(chopped)
  • 1 tbsp Kasuri Methi
  • 5 tbsp Whisked Curd
  • Salt to taste

For Gravy-Masala :

  • 3 tbsp Oil
  • 2 nos Green Cardamom
  • 3 nos Cloves
  • 1 nos Black Cardamom
  • 1 inch Cinnamon
  • 2 nos medium Onions (finely chopped)
  • 1 cup Fresh Tomato Puree
  • 1 tsp Red Chilli Powder
  • 1 tsp Coriander Powder
  • ½ tsp Garam Masala Powder
  • 2 tbsp Cashew paste (10-12 Cashewsnuts)
  • 3 tbsp Fresh Cream
  • 1 tbsp Kasuri Methi
  • Salt to taste

Chicken Marination

To begin making the Kasuri Murgh Malai recipe, wash the chicken nicely. Chicken pieces are marinated with turmeric powder, crushed pepper, ginger garlic paste, chopped green chillies, kasuri methi, salt and whisked curd. Whisk the curd/yogurt and if thick, add the required water to make it a little thin. Mix well and set aside for 60 mins at room temperature.

Make the Masala Gravy

Heat oil in a pan or Kadai and add the whole spices. Once it splutters, add the chopped onions and fry on medium heat for 8-10 mins till light brown. Now add the tomato puree and fry on medium heat for 2 mins. Add the marinated chicken and cook on medium heat for 5-10 mins.

Add all the spice powders, mix and saute on medium heat for 2 mins. Add in the cashew nut paste, mix and cook on low heat for 2-3 mins till oil separates. Also, season with salt to taste. Now add Water Mix, cover and cook on low heat for 15 mins till the chicken is tender.

Remove the lid, add the cream, mix well and simmer on low heat for 2-3 mins. Garnish with Kasuri Methi, mix and simmer for another 2-3 mins. Serve hot.

Kasuri Murgh Malai is great for your special meals and can be served along with Naan, Roti(phulka), and Roomali Rotis. It can also be paired with rice or any lightly spiced pulao. Kasuri Murgh Malai for a perfect dinner.
