Hyderabadi Mutton Biryani | Mutton Biryani Recipe

Hyderabadi Mutton Biryani, One is the Hyderabadi Kacche Gosht ki Biryani and the other is pakki gosht ki biryani. Kacchi mutton biryani, the layer of marinated and uncooked meat pieces is placed as the bottom layer. Then the cooked rice is layered on the top of marinated meat layer followed by the process of slow cooking.

Pakki mutton biryani, cook the marinated mutton first. And then layer it between the rice. In this method, cooking the meat well before the layering part. The Hyderabadi Mutton biryani pot is sealed and cooked on dum.

Steps For Hyderabadi Mutton Biryani Recipe :

Meat Marination Ingredients :

  • 500 gms Mutton
  • 1 tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 2 tbsp Biryani Masala
  • 2 tbsp Ginger-Garlic Paste
  • 6-8 nos Green Chilli
  • 1 ½ Cup Curd
  • ½ Cup Browned Onion
  • 2 pods Green Cardamom
  • 1 inch Cinnamon
  • 2 tsp Shah Jeera (Caraway Seeds)
  • Salt to taste

Firstly, in a large bowl, add the mutton pieces, add salt to taste, add turmeric powder, add red chilli powder, add biryani masala add ginger-garlic paste. Add green chilles, add curd, add deep fried onion and mix well. Add green cardamom, cinnamon, shah jeera, and mix all together. Rest this marinade in the refrigerator for about 4-5 hours.

Cook Marinate Mutton

  • ½ cup Oil(Use Fried Onion Oil)

Add oil to the vessel and add the marinated mutton and cook on high heat for 7-8 minutes. Fry till oil separates. Cover and cook 20 minutes on low heat. Keep stirring every 5-10 minutes. Add some fresh mint and coriander leaves. Switch off the flame and set it aside.

Biryani Rice Ingredients :

  • 2 cups Basmati Rice (soak for rice 30mins)
  • 3-4nos Bay leaves
  • 4-5 nos Green Cardamom
  • 2nos Black Cardamom
  • 2nos Star Anise
  • 1inch Cinnamon
  • 10-12nos Black Pepper
  • Salt to taste

When the mutton is cooked soak the rice for 30minutes. Meanwhile, take a large cooking pot, add water generously into it. Add whole spices such as bay leaves, green cardamom, black cardamom, star anise, cinnamon, black pepper into the water. Bring the water to a boil.

Bring water to boil and add salt to taste. When the water boils add soaked rice into it. Add ghee to the water. Cook the rice until it is ¾ done or 70% done. Strain the rice at this stage.

Hyderabadi Mutton Biryani Layering

Add rice to the meat. Sprinkle biryani masala. Add fried onion, add fresh coriander leaves. Add rest of the rice, sprinkle biryani masala, add saffron flavored milk all over the rice and garnish with fried onion, mint leaves and coriander leaves. Add also kawra water and add ghee for fragrance. Add a ladle of hot water all over to prevent the biryani from getting dry.
Place a skillet/tawa below the cooking pot while giving dum. Seal the lid of the cooking pot tightly with chapati dough. Dum the biryani for about 5-10 minutes on high flame and for 30 minutes on low flame.

Always take the biryani out from one corner and take it out from the bottom to the top. Serve the biryani with raita. gravy by the side, like a salan that tastes great with the biryani.
