Steps For how to make Chicken Maharani Recipe:

For Masala Powder Ingredients:

  • 1 tbsp Coriander Seeds
  • 1 tsp Cumin Seeds
  • 1 tsp Fennel Seeds
  • 2 nos Green Cardamom
  • 4 nos Cloves
  • 1 tsp Black Peppercorns
  • ½ piece Mace Flower (Javitri)
  • 5 nos Red Chilies

For Onion-Cashew Paste Ingredients :

  • 1 no Big Onion (roughly cut)
  • 12 nos Cashew nuts

Other Ingredients :

  • 500 gms Chicken pieces
  • ¼ cup oil
  • 1-inch Cinnamon
  • 1 no Bay leaf
  • 1 no small onion (sliced)
  • 1tbsp Ginger-Garlic paste
  • 1/2 Cup Whisked Curd
  • 1 tbsp Kasuri methi
  • 2nos Green Chilli
  • Salt to Taste
  • 1tsp Fresh Coriander Leaves

Prepare Masala Powder

Take a pan and add all the spices for roasting such as Coriander Seeds, Fennel Seeds, cloves, cardamom, mace, dry red chilli, peppercorns and cumin seeds. On medium heat, dry roast the spices until they turn aromatic. Switch off the flame. Let the spices cool down. Then put them in a grinder and grind them into a fine powder.

Making Onion-Cashew Paste

In a mixing jar add chopped onions and cashews. Grind them into a smooth paste. Do not add water.

Make the Mughlai Chicken Maharani

Heat oil in a pan and add the cinnamon and bay leaves. Give a stir for a minute. Now add the onion-cashew paste and fry on medium heat for 5-6 mins till the paste is grainy.

Add the ginger-garlic paste, mix and fry on medium heat for 2-3 mins. Now add the blended spice powder. Give a mix and cook on low to medium heat for 3-4 mins. If required add a splash of water. Now reduce heat to low and add the whisked curd/plain yogurt. Stir and mix it well. Stir on low heat till oil separates. Add Salt.

Now add the chicken pieces. Mix and sear on high heat for 4-5 mins. Continue to cook on medium heat till the chicken is browned. Cover and cook on low heat for 10mins. Now give a stir and add water. Cover and cook 20 mins on low heat till chicken is tender.

Now add the roasted and crushed Kasuri Methi and the slit green chillies. Give a mix and simmer on low heat for 5 mins till oil separates. Garnish with Coriander leaves. Rich, Yummy, Delicious Mughlai Chicken Maharani is ready to have.

Note – If you want a creamy version of this recipe, then you can add 2 tsp fresh cream to it.
