It gets its mild flavors from cashew paste and cream, creamy gravy-based curry specially prepared with milk, and fresh cream. Changezi chicken curry has a somewhat resemblance to butter chicken, as both are creamy.
To make this shahi chicken changezi recipe, the chicken needs to be roasted first then drizzle some ghee onto the hot charcoal to smoke. Then cooked with a rich gravy, made of milk, fresh cream, onion-cashews paste, ginger-garlic paste, tomato, garam masala powder.
It can be best enjoyed with naan. You can pair this with roti or paratha as well.
Steps For how to make the Chicken Changezi recipe:
For Marination Ingredients :
- 500 kg Chicken cut into pieces
- 1 tbsp Ginger Garlic Paste
- ½ cup Curds
- 1 tbsp Red Chilly Powder
- 1 tbsp Lemon Juice
- Salt as required
For Onion-Cashewnut Paste Ingredients:
- 2 tbsp Desi Ghee
- 1 cup Onions sliced
- 10-12 Cashew nuts
For Masala Gravy Ingredients :
- 2 tbsp Ghee
- 1 cup Milk
- 2 tsp Ginger Garlic Paste
- 1 cup Tomato Puree
- 1 tbsp Coriander Powder
- 1 tbsp Red Chilly Powder
- ¼ tsp Garam Masala
- 3 tbsp Fresh Cream
- 1 tsp Chaat masala
- 1 tsp dried Methi Leaves
- 2 slit Green Chillies
- Salt as required
Chicken Marination
In a bowl of chicken, add curd, ginger garlic paste, lemon juice, salt, red chili powder, and mix well. Let it rest for half an hour.
Onion-Cashewnut Paste
Heat ghee in a wok, add onion, cashew nuts, fry them until the onion turns translucent
Let it cool down and then grind it into a fine paste.
Make the Masala Gravy
In the same vessel, fry the marinated chicken without ghee/oil. Roast the marinated chicken till it turns dry and golden brown. In the middle place a bowl. Put the blazing charcoal in that bowl and ghee over it. Cover and let it rest till all the smoke is infused in the chicken. This will give you a smoky flavor of the chicken. Then transfer it into a bowl.
Now, for the gravy, heat ghee in a wok, add the remaining ginger-garlic paste mix, and sauté till the raw smell goes away. tomato puree, stir it on high flame. Add red chili powder, coriander powder, garam masala, chaat masala, give it a mix. And meanwhile, add milk stir it.
Reduce the flame and add onion-cashew nuts paste, salt. Cook until all comes together (about 2-3 minutes).
Add the roast chicken pieces, give it a mix. Add fresh cream cook together. Add slit Green Chillies, Add dry fenugreek leaves powder mix, and cook for 2-3 minutes. Add some coriander leaves (optional)
Take the pan off the heat and transfer the changezi chicken into a serving bowl, garnish with dry fenugreek leaves powder, and drizzle fresh cream.
Serve hot with garlic butter naan.
