Chicken Biryani

Indian cuisine, chicken biryani is a dish that has spread across world recipe is made of partially boiled basmati rice layered over cooked chicken. Very easy Chicken biryani recipe for beginners can cook easily at home without any difficulties. it is typically prepared by layering seasoned chicken with rice and aromatics and steaming them together. Serve hot with choice of raita.

Steps For Chicken Biryani Recipe :

Make Chicken Marination and Gravy for Biryani :

  • 1 kg Chicken with Bone
  • ½ tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • ½ tsp Coriander Powder
  • 2 tbsp Ginger Garlic Paste
  • 1 Cup Curd (beaten)
  • ¼ Cup Fresh Coriander Leaves (chopped)
  • ¼ Cup Fresh Mint Leaves
  • 6-8 nos Green Chilies
  • ½ Cup Fried Onion
  • 2 tbsp Homemade Biryani Masala
  • 1 tbsp Lime Juice
  • 2 tbsp Ghee
  • Salt to Taste

In a bowl mix chicken, turmeric powder, red chilli powder, coriander powder, ginger garlic paste, beaten curd, green chilies, fried onions, lime juice, biryani masala, salt to taste, fresh mint leaves and fresh coriander leaves. Mix well to marinate the chicken.
Let the Chicken marinade for at least 30 minute and preferably overnight or minimum 4 hours for better flavor.

In a pan add ghee and set the flame to medium. Add the marinated chicken and cook. Cover and cook on a medium flame until chicken is soft and tender.

Make Rice for Biryani :

  • 2 Cups Basmati Rice
  • 2 Bay Leaves
  • 4 Green Cardamom
  • 1 Black Cardamom
  • 1 inch Cinnamon
  • 2 star anise
  • 1 tsp Shahi Jeera(Caraway Seeds)
  • Salt to taste
  • 1 tsp Ghee

Wash the rice thrice and let the rinsed rice rest for 20 -30 minutes. Now in a separate stock pot boil enough water and add some whole spices (bay leaf, cinnamon stick, green cardamom, black cardamom, star anise). Add shahi jeera(caraway seeds). Add a tablespoon of ghee. Now boil the rice until 3/4th done. Check the rice by pressing a grain of rice between your thumbs. The grain should not squeeze completely that’s when you stop cooking. Now drain the rice and keep aside.

Make For Biryani Dum :

  • 1 tsp ghee
  • Few mint leaves
  • Fresh Coriander Leaves(chopped)
  • Saffron Mix Milk
  • ½ tsp Rose water
  • ½ tsp Kewra water

To assemble the chicken biryani, In a heavy bottom handi add cooked chicken. Now add top with the cooked rice, now saffron mix warm milk and add to the biryani. Now layer with fresh coriander, mint leaves and fried onions. Add some rose water and few drops of kewra water, now add some ghee & sprinkle few biryani masala on top of the rice. Use dough to seal the top and cover so that heat does not escape the pot. Now keep it on dum for 15-20 minutes on low flame.

Serve hot with choice of raita
