Chicken Vepudu(chicken fry Andhra style recipe) has different variations while preparing the recipe. Some people use chicken pieces with bones some use only the chicken flesh pieces for preparing chicken Vepudu. I marinated chicken before frying which also gives a nice taste and they slow cook the chicken after marination.

For Andhra Chicken Fry Ingredients:
To Make Chicken Marinate:
- 1 Kg Chicken (with bone)
- ½ Tsp Turmeric Powder
- 4 Tsp Red Chilli Powder
- Salt to Taste
To Make Masala Powder:
- 1 ½ Tbsp Coriander Seeds
- 1 Tsp Cumin Seeds
- 1 Tsp Fennel Seeds
- 1 Tsp Peppercorns
- 3 Nos Cardamom
- 4 Nos Cloves
- 1-inch Cinnamon
- 4 Nos Whole Red Chillies
- 4 Nos Whole Kashmiri Red Chilli
To make Chicken Fry:
- 4 Tbsp Oil
- 4 Nos Onion
- 2 Nos Green Chilli
- Curry Leaves
- 2 Tsp Ginger Garlic Paste
- 2 Tbsp Ground Masala
- Salt to Taste
- Curry Leaves
- Chopped Coriander Leaves
Chicken Marination
Clean chicken pieces with bones and do marination. Take chicken with bone, salt, turmeric powder and red chili powder in a large bowl. Mix it all well and marinate the chicken for 15-30 mins.



Prepare Andhra fry masala
In a frying pan and add the whole spices coriander seeds, cumin seeds, fennel seeds, peppercorns, cardamom, cloves, cinnamon, red chilies and Kashmiri red chilie. Dry roast until they release a nice aroma. Turn off the stove and let them cool down. Transfer them to a mixer jar and grind them into a fine powder. Set aside this Andhra fry masala.



Make the Andhra Chicken Fry
In another flat pan, heat oil. Add chopped onions and green chilies. Fry onions until they get the nice translucent stage and add the curry leaves and marinated chicken. Please keep in mind that we added salt to the marination as well.



Add the ginger-garlic paste, mix well and cook for 5 mins to make sure the chicken is not pink anymore. Add 2 tbsp of the ground masala powder and cook for 5 more mins. Add the remaining ground masala powder after 5 mins. Mix and add salt.
Note: Do not add any water and the chicken can be roasted well only with its own juice and oil steam.
Mix it all well and cook for 10 mins on low flame. Add the curry leaves and chopped coriander. Give it a quick mix. Andhra-style Chicken Fry is ready to be served.
